GOAT Breakfast Sandwich

Ingredients:

∙ 1 brioche bun

∙ 1 egg

∙ 1 slice american cheese

∙ thinly sliced ham

Dijonnaise

∙ 50 g (3 T) mayo

∙ 25 g (1 T) dijon

Instructions:

  1. To make the dijonnaise, mix together the ingredients in a small bowl.

  2. Over medium heat, toast the bun in a saute pan with a little bit of oil.

  3. When the bun is done toasting, spread a little bit of dijonnaise on the bottom bun and set aside.

  4. Over medium heat, heat up a small amount of oil and drop your egg into it, slightly season the yolk of it with salt.  When the egg is mostly set, break the yolk and flip it.

  5. When the egg is flipped, lay a piece of american cheese on top.  When the cheese is melted, remove the egg from the pan and place it on the toasted bun.

  6. Throw a few pieces of ham into the same pan you cooked the egg and allow the meat to heat up and render just a bit.  Place the ham on the sandwich and top with the other half of the bun
