Herby Compound Butter

Ingredients:

∙ 454 g (1 lb) unsalted butter, very soft

∙ 25 g (½ c, loosely packed) parsley, picked

∙ 10 g (¼ c) chives, chopped

∙ 3–4 g (1 T) fresh thyme leaves, picked

∙ 10 g (1 T) shallots, chopped

∙ 10 g (2-3 cloves) garlic, minced

∙ 5 g (1 t) kosher salt

∙ 4 g (1½ t) cracked black pepper

Instructions:

  1. Combine all ingredients except parsley in the food processor and pulse until fully broken down. Add butter and mix until fully combined.

  2. Place butter in a piece of plastic wrap and roll into a log and place in the freezer.  Slice pieces off as needed.
